Salt, cinnamon, and nutmeg pose three distinct kinds of risk despite all being pantry staples. Salt in any real quantity can cause sodium ion poisoning — thirst, vomiting, tremors, and in severe cases seizures — and cats are small enough that it doesn't take much table salt to reach a concerning dose relative to body weight.
Nutmeg is the most dangerous of the three even in small amounts: it contains myristicin, a compound that can cause disorientation, elevated heart rate, and in larger doses more serious neurological effects, and the toxic threshold is low relative to a cat's size. Cinnamon in trace amounts (a dusting on food) is comparatively low-risk, but concentrated cinnamon essential oil or a large mouthful of ground cinnamon can irritate the mouth and GI tract and should still be kept away from cats.
