Cooking grease, spilled cooking oil, and olive oil all raise the same core concern: cats that consume a significant amount of fat all at once are at risk of pancreatitis, an inflammation of the pancreas that can range from mild GI upset to a serious, painful illness requiring hospitalization. This risk is highest with grease pooled from cooked meat, since it's both concentrated fat and often still carries meat flavor that makes it tempting.
Coconut oil is a partial exception — some owners use small amounts as a coat or digestive supplement under veterinary guidance — but even it can cause diarrhea or contribute to weight gain in excess, and it isn't a substitute for veterinary-formulated supplements. A cat that gets into a spill of any cooking oil should also be checked over for oil on the coat and paws, since cats will groom it off and ingest it a second time that way.
